Oops — we missed that in step 2! Sorry for the confusion. Step 2 should say: “Add 1 tortilla, then sprinkle ÂĽ cup shredded cheese, followed by mashed sweet potato, green chile, scrambled eggs, remaining ÂĽ cup cheese, and the second tortilla on top.” We’ll update that. Thank you!

I served them with “avocado cream” (just plain avocado with cilantro), I didn’t have green Chile, so I put a bit of roasted green/red peppers, I think with the Chile would have been amazing but this one did the trick. To save extra time, prepare a couple of sweet potatoes a day before and freeze them, or put them in the refrigerator, so you don’t have to wait too much cooking them for breakfast time (honestly this can be eaten any time!).
